If you’ve read my blog, you know I’m obsessed with Smoothie King smoothies. They are extremely delicious and healthy! My favorite thing about them is adding veggies that you aren’t really taste in them. Especially for the kids.

I’ve been working out a lot more. Planning things in the future. I want to get healthy for the kids. I went and bought a membership for the Y. I also went and bought a double jogging stroller – those things weigh a ton! Then I add 80 lb. of kids to it, so it’s a workout just trying to walk around with it.

My goal is to lose about 20 lb. and just tone up. I would love to be where I was, before kids. What a scary thought. I also don’t mind the thought of being healthy, just in case the next one shall arrive. It’s been a little hectic, to wake up one day and just realize how not happy you are with yourself. So I’ve been trying to change that.

It’s been a bit hard to eat as healthy as possible. But I know, if I just work out, without getting my eating habits on track, I’m not going to get to where I want to be in the amount of time I want to take. So I’ve been looking into alternative ways to help me get on track. Smoothie King came out with some veggie smoothies. It helps to sneak more veggies into my diet. They introduced this new Veggie Avocado Pineapple smoothie that I’m dying to try. They also have: Apple Kiwi Kale, Berry Carrot Dream and Carrot Kale Dream. All of the flavors are pretty good. The berry one is my favorite.

Recipe / Guacamole with Mountain High Yoghurt

I love dips of all kind. I love to dip my snacks into anything I can get my hands on. I was the kid who needed dipping sauce for all of my foods. Ketchup, ranch dressing, BBQ sauce, sweet and sour sauce, hummus, guacamole — sign me up! ┬áSo for Memorial Day, we decided to grill and I was in charge of the guac! I’ve been trying to sneak healthy ingredients into our every day food, so I decided to use Mountain High Yoghurt as a substitute in my guacamole. I normally use sour cream, but I figured, why not try yoghurt? I’ve used it in baking before and my baked goods come out so moist – I was excited to try.

For a basic guacamole recipe, you only need 4 ingredients: avocado, yoghurt, garlic and lemon juice. You just mash all together in a bowl. But I wanted to mix it up a bit.

Ingredients:

  • avocado
  • Mountain High Yoghurt in plain
  • diced tomatoes
  • lemon juice
  • diced onion
  • garlic (I use minced)
  • salt & pepper

I just threw all into a bowl and mashed together. It’s a bit easier to mash the avocado first and then add all the other ingredients, but Birdie wanted to help, so we just threw everything into the bowl together. You can dice the onions, we like bigger chunks (we being me, since Birdie hates onions).

It was a hit at our little grill party. I also snuck it into some more cooking over the weekend… I used the vanilla flavored yoghurt in my smoothies (best way to hide some veggies in our food), and I even used it in my cupcakes — you can use it in everything.
